THE CHARM OF CHABLIS

Yannick Cadiou is a grape whisperer. With years of practice as the head vigneron for one of Chablis' grandest domaines - Domaine Laroche - before recently taking on his own organic estate of 5 acres, he has perfected the art of personal hands-on harvesting with the loving reverence of a faithful servant of nature.

It is here, in the northern most region of Burgundy, that he cultivates a harmony for his Chardonnay grapes to express themselves in their “purest” form. “The less you manipulate the wine, the better it will be.” Instead, he insists on offering total comfort and space.

How does he know when to harvest ?

“The Palate” Only by tasting the fruit will you know the truth.
"Our own palate is more qualified than any technical analysis."

Yannick’s nurtured Chablis yields are purposely low, producing complex and intense wines.
His Côte d’or is wonderfully fragrant, crisp, mineral, fruit forward with a richness
but also a lovely freshness with a lemony core and some creamy notes.
With so much personality this Chablis proves
